Now this is a brilliant concept: Book a cooking class with an international chef, make three regional dishes as he or she teaches you about the process, learn fascinating facts about each ingredient and regional traditions along the way, and engage in fun conversation throughout. And by the way, the chef is in his or her own country (and kitchen) while you’re in yours… it’s via Skype!

I had the opportunity to do all of the above thanks to an invitation from The Chef and the Dish, a Toronto based company that has received plenty of accolades from major media outlets and press (think CBS, ABC, Forbes and more), to participate in what is one of the best culinary experiences I’ve had of late. Although professional chefs, many of whom have worked in Michelin starred restaurants, are available from a myriad of countries from which to select, I chose to spend quality cooking time with one from Italy. Chef Paula Martinenghi, of Sesto Calende in the Lombardy region of Northern Italy, “arrived” in my kitchen via Skype one morning at 11:30am (6:30pm her time). For 2.5 hours, she guided me through steps to make authentic Bruschetta, just-perfect Prosecco and Parmigiano Reggiano Risotto, and Poached and Stuffed Pears cooked in a light syrup with a Parmigiano Reggiano and Ricotta filling.

Before all of this culinary creativity occurred, I was sent a checklist of necessary ingredients and equipment. Next, I scheduled a phone chat with one of the Kitchen Assistants at The Chef and The Dish to ensure that my laptop (a tablet will do) with sound, a built-in camera, and high-speed internet was working effectively. We reviewed the shopping and utensils list that needed to be at-the-ready when the class started, I received suggestions of local stores from where I could purchase some of the ingredients, and my Kitchen Assistant addressed any questions. I also had the opportunity to get into the spirit of the class by checking out a local market tour with Chef Paola in her village. (To view, click on the YouTube link on the video.) Hungry yet?

 

At the pre-determined time, Chef Paola called me via Skype. As we cooked, laughed, and learned about each other, she fine-tuned my cooking skills while making the same dish in her own kitchen; we could see what the other was doing thanks to my laptop perched close to the stove and prep area and hers on her island. The two of us chopped, stirred, grated, and engaged in a fair amount of Valdo Cuvee 1926 Prosecco Valdobbiadene ($19.99) while having a fabulous time. When the three courses were complete, we (virtually) clinked our glasses of bubbly on the monitor and said “Ciao” with a resolve to keep in touch.

It was time to enjoy Italian deliciousness with my guests in the comfort of my own home that, by this time, was filled with aromas not unlike an Italian trattoria. And, if I say so myself, the dishes paired with the extra-dry Prosecco were exceptional!
